If you want some color on your plate, the look is over! Check out these vibrant Okinawan sweet potatoes from Melissas Produce (www.melissas.com) for those of you who have never seen PURPLE sweet potatoes, what?!?

Try this recipe with any sweet potato:
~ 16 oz.or 1lb Okinawan Sweet Potatoes (sliced or cubed)
~ 1 cup unsweetened coconut milk
~ 1 tsp cinnamon

Instructions:
1.) Slice/cube 16oz.of okinawan sweet potatoes
2.) Add to a pot of boiling water and turn down 6-7 heat and let cook for ~25-30 minutes.
3.) Drain 95% of the water and add 1/2cup unsweetened coconut milk and 1 tsp cinnamon. Turn heat off, yet stir and allow to simmer for 2-3 minutes.
4.) Add the second1/2 cup coconut milk and mix contents well with an immersion blender.
5.) Portion out themass of mashed potatoes into cupcake foil cups or onto a non-stick pan in ~2oz. portions.
6.) Freeze for at least 4 hours then transfer all "discs" of pre-cooked, frozen sweet potatoes to a quart sized freezer bag. You cn easily remove 1-2 servings as needed for your meals :) Enjoy!
